I like to experiment with recipes to reduce fat as much as I can, add fiber, and still keep the flavor. Here are some of my favorite concoctions (for dessert, of course!).

Earth Cookies | Healthy Carrot Cake | World's Best Apple Pie | Banana Bran Muffins

Earth Cookies
Mix together:
1 c. whole wheat flour
1/2 c. white flour
2 c. quick-cooking oats
1/4 c. oat bran
1 tsp. baking soda
1/2 tsp. salt
1 tsp cinnamon
Cream together:
1/4 c. soft margarine
1/2 c. packed brown sugar
1/2 c. white sugar
3/4 c. chunky applesauce

Add to this mixture:
1 egg plus 1 egg white
1 tsp. vanilla extract
Flour mixture
Mix in:
1 c. chocolate chips
1/2 c. chopped nuts (if desired)

Bake 10-12 minutes at 350F, ungreased cookie sheet

Healthy Carrot Cake
2 c. grated carrots
1/4 c. water
1/2 c. Egg Beaters
1/3 c. sugar
1/4 c. applesauce
1.5 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/3 c. oat bran
2/3 c. whole wheat flour
1/2 tsp. vanilla extract
1/4 c. chopped walnuts
Add water to carrots and microwave 4 minutes on high. Mix together Egg Beaters, sugar, carrots, and applesauce. In separate bowl, mix together oat bran, flour, salt, soda, cinnamon, and nutmeg. Add this to the egg mixture. Add vanilla and nuts; mix well by hand. Put in oiled 8"x8" pan. Bake at 350F about 30 minutes until done.

Frosting:
3 ounces light cream cheese
2 tbsp. margarine
1.25 c. powdered sugar
1/2 tsp. vanilla extract

Beat ingredients with electric mixer at room temperature. Spread on cooled cake.

World's Best Apple Pie
Filling:
6 Granny Smith apples
1/3 c. white sugar
1/3 c. packed brown sugar
1 tsp. cinnamon
1/3 tsp. nutmeg
dash cloves
3 tbsp. white flour
1/4 tsp. salt
Streusel Topping:
3 tbsp. margarine
6 tbsp. flour
1/2 c. packed brown sugar
3/4 c. quick-cooking oats
1/4 c. oat bran
Prepare single pie crust of your choice and place in a 10" pie pan. Pare, core, and slice apples. Mix other filling ingredients in a bowl, then add to apples and stir until apples are coated. Turn apples into pie pan. For streusel topping, cream margarine with brown sugar and flour. Stir in oats and oat bran. Sprinkle over apples. Bake at 375F about 55 minutes until apples are soft and streusel topping is not yet burned. This makes a really big pie!

Banana Bran Muffins
Mix together:
1 c. whole wheat flour
1/2 c. oat bran
1/2 c. wheat bran
1/2 c. wheat germ
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
dash nutmeg
Cream Together:
2 or 3 mashed, very ripe bananas
1 tsp. vanilla extract
1/2 c. (packed) brown sugar
1/4 c. chunky applesauce
1 Tbsp. vegetable oil
1 egg
1/4 c. skim milk
Add flour mixture to banana mixture and stir until well mixed. Add 1/2 c. chopped walnuts. Grease a muffin tin with spray corn oil or similar lubricant. Bake at 350F for about 25 minutes. Makes one dozen large, very banana-ish muffins.
